parboil carrots

Parboiling simply means to partially cook. In this case you would partially boil the carrot. Many recipes call for par cooking to get the bitter flavor out prior to finishing in a dish, or to dent that product becoming the dominant flavor. Depending on the recipe you may want to partially roast or grill. That tends to add to the flavor, carmelizing etc. and does not leach the flavors as much as boiling.
