Carrot soup is yummy and freezes beautifully. Most cookbooks have recipes--or you can look for a recipe for pumpkin, winter squash or sweet potato soup and just substitute an equal amount of carrots for the starring veggie. Or you can dice carrots up real small, blanche/parboil them and freeze them in 1/4 cup (or more) servings. That way, you can throw them frozen into a pot of soup--homeade or canned--or add them to tomato/pasta sauce or beans or into a veggie potpie or whatever.
