Hi Jeanie,
You probable could cut the stalks, you would have to root them.
I have a Bamboo that is about two years old, it is about 10 inches tall, it is in a small chinese pot filled with rock, all you do is keep it full of water, you can add a little plant food but very weak, to much is not good. I usually put plant food in the water when I water my other plants and when the can is almost empty add more water for the Bamboo.about once a month.
