Recipe(tried): Crunchy Peanut Butter Oatmeal Cookie - results

The cookies have a good taste. I let them cool a bit on the cookie sheet prior to removing to let them crisp up a bit. DH like them too. However, I left them on the rack overnight and the evaporative cooler caused them to become quite soft. I packed them with bread slices (a trick my Mom taught me) and sent them with DH in an airtight container to work. I might have froze them and sandwiched ice cream between two if he hadn't taken them to work. I probably should have stored them in the airtight container right after they cooled yesterday. They will probably be a good cookie to make in the winter when we have the pellet stove running and moisture is at a minimum in the house! Good flavor tho.
