Re. beer batter
Misc.Hi Lori --
What I meant by beer batter is when you mix in beer in your batter mixture (flour, egg, water, etc.) which makes it fluffy. The Japanese way of making tempura batter is with flour, egg yolk, and ice-cold water to make the coating crispy. Also, the restaurant probably uses egg whites too.
I think I may have a beer batter recipe I found when I was surfing the net months ago. I could try to find it if you'd like -- just let me know.
