Hi, I copied this recipe from my mom a few years ago and have yet to try it out, but they sound similar to what you are asking for.
FRIED PIES
2 cups flour
1 teaspoon salt
1/2 cup shortening
1/3 cup water
1 large (21 oz) can pie filling
powdered sugar
Mix flour and salt. Cut in shortening. Add water. Roll out to 1/8-inch thickness. Cut 3-inch circles.
Spoon 1 tablespoon of filling on each circle. Fold over and seal with fork.
Fry in 1-inch oil 350 degrees F, turning once until golden brown. Cool 1 hour, then dust with powdered sugar.
For Pudding Pies, I would just guess to make a box of vanilla pudding & pie filling and spoon that inside.
