As long as they show no signs of mold or fermentation, they are safe.

Q: My canned pears have turned slightly pink. Are they safe to eat?

A: Pears naturally contain a color pigment, leucoanthocyanin, which may become pink under certain conditions that occur in home canning. Pink pears can be safely eaten.
