re: Chipped Ham

According to an article I read a number of years ago the ham of chipped ham fame in Pittsburgh was developed by some guys trying to create a meat for sandwiches that steelworkers could pack in their lunches, but that without refrigeration or the cold packs we have today would not spoil. The article described the manufacturing process, but I don't recall it.
