Misc.Hi Jackie:-) What I think of as country bread, in terms of Italian cooking such as Lidias, is a round loaf with a chewy, crusty crust, and, maybe kind of a somewhat dense texture on the inside - something possibly made with a biga (a starter), and now, oten called an artisan bread in this country. Look for Panne Panini or the like (I'm thinking of such a loaf that is sold at Whole Foods), or maybe even Vienna bread. It would be made with white or unbleached white flour - not a whole grain kind of bread with seeds etc. in it. I hope someone else will also answer your question so they can perhaps clarify this further. Lidia's Peach Lasagne does sound really good, doesn't it? :-)
