Recipe: Saucy Meat Loaves with Parsley Rice (using wheat germ and egg white)

SAUCY MEAT LOAVES WITH PARSLEY RICE

FOR THE SAUCE:
1/4 cup Dijon-style mustard
3 tablespoons honey
FOR THE MEAT LOAVES:
1 1/2 pounds lean ground beef or turkey
3/4 cup kretchsmer original wheat germ
1/2 cup chopped green onion
1/3 cup water
1/2 teaspoon salt (optional)
1/4 teaspoon freshly-ground black pepper
1 egg white, lightly beaten
FOR SERVING:
1 tablespoon chopped parsley
4 cups hot cooked rice

TO MAKE THE SAUCE:
Combine mustard and honey; mix well. (For added convenience, substitute ready-prepared honey-mustard sauce, barbecue sauce, or salsa.)

Heat oven to 350 degrees.

TO MAKE THE MEAT LOAVES:
Combine remaining ingredients except parsley and rice. Mix lightly, but thoroughly. Shape meat mixture into eight (3x2-inch) loaves; place in 11x7-inch baking dish.

Bake 30 to 35 minutes or until meat is no longer pink and juices run clear; drain.

TO SERVE:
Spoon sauce over meat loaves; stir parsley into rice.
