David, I emailed your recipe and story to my mother-in-law, because we are the only ones who love greens in the family. She promised to fix them your way when we go up to visit next week. I'm looking forward to it. She has kale and collards growing this year. She eats greens almost everyday, but just steams them with a little bacon fat, and eats them with raw onions. My grandmother used to take us polk hunting in the spring, but she would only collect it when the stalks were really small. We also like dandelions and billard (field cress), and water cress. Do ramps grow down your way? My mother-in-law introduced me to pressure cooking and canning, and I have never had a single problem with using them in twenty years, come Wednesday. You can can green beans in 15 minutes, as opposed to water bathing for 3 hours. Enjoy your stories, keep them coming!
