Recipe sounds great!

Actually, panko is not a brand of breadcrumbs, but packaged coarse, dry breadcrumbs. It's quite different than American packaged dry breadcrumbs and produces a thick crust.

If you can't find panko, I'd recommend using homemade fresh breadcrumbs that you've then dried out (but not toasted) in the oven or microwave.
