re: pie in a jar

It will be unsafe to can a recipe that contains the crust ingredients. They are low acid foods and not safe for home canning. The only thing safe to can at home is a canned pie filling using a product called Clear jell. Tapioca, flour and regular cornstarch should not be used. Normally the Clear jell is ordered online. I get mine from www.barryfarm.com. There are other sources,too. Amish stores also carry it.

I can post recipes for using this product if you need them. There are recipes for apple, blueberry, and cherry. These are all from the county extension office and approved by the USDA for home canning.
