Misc.You will need to follow a recipe that is tested for safety. Canning your own recipes is not recommended because we have no way to determine it's ph level or density level. There are recipes available for you to use from USDA or the Ball Blue Book. Then, if you find one similar to yours, you can safely use dried herbs or spices to change it, but not fresh herbs or extra vegetables, etc.
The packaged seasonings are not safe to use, either, because they have thickeners added to them. No thickeners are safe to add.
