Sue-Singapore: re Caramel Apples

Sorry that you had difficulties with the apples. It is a slow process, but an hour is a long time. I would estimate (although I've never timed it) that maybe it would take 1/2 an hour. They should come out the same lovely color as Kraft caramels. I have never had the bubble problem. I wonder if there is an altitude difference/problem. I am not familiar with altitude, etc. of Singapore but this could effect the heating and temperature I would think. You can double the recipe - I have done it many times. Good luck and hope the girls like them. Keep me posted if you make more.
