ISO: manyhats, questions about caramel apples

We tried the caramel apple recipe out and I have a few questions. Making one batch, how long do you think it should take to cook the caramel? I bought a thermometer but I don't think it worked. Should it take an hour to cook it? It never got hot enough. Also, do you know why bubbles appeared on the apples a few minutes after the apples were rolled in the caramel. This didn't happen right away. Do you think it was cooked too long? Can I make 2 batches at one time or is it better to make one at a time? Kathy thinks the apples look great so that's all that matters. Her cross country team is spending the night tonight - they'll be the critics. Thanks for your help.
