If you put in small egg yolks andd the recipe called for large egg yolks, then the custard would not jell properly. Also, if you used ramekins deeper than the ones specified in the recipe, then it would need more time to bake--

Anyway, let me know the final outcome. Your dinner party sounds like fun !!! You and I are now creme brulee experts, for whatever that's worth---I am having company in two weeks-you gave me a great dessert idea---I think I'll make pumpkin creme brulee and serve it with vanilla bean whipped cream, sprinkled with cinnamon-sugar !!

Now, if I can only figure out what I'll make for dinner--HUMMMMM !!!!
