I love your idea - another question....

I love your idea -I just happened to buy some fresh berries yesterday from the framers market too! But you KNOW I'm dying to use that new little torch! Any ideas there? If I tried to carmalize the brulee before the fruit sauce then Im afraid there would be such a seperation of texture that my "mistake" would be found out. Again, thanks a million!
