I am SO informed now! Armed and ready! Now that you mentioned it, I think that maybe it was the egg yolks. I remember thinking that the eggs were somewhat small also. I did make one extra ramikin full and will check to see if I can get it to carmalize before I ruin the good ones. Thanks for all the great ideas!
