Oh heck--go ahead with the torch !!!

Go ahead and carmelize the top--the flavor and texture are always great. And, those torches are fun !!! The underlying custard, as you describe as being loose, will then mix with the sauce once someone breaks through the whole dessert with a spoon---yum.....

Still put a fruit sauce on each creme brulee RIGHT before serving--I just thought that you could even do a carmel sauce with whipped cream ???--whatever you do, place the sauce on right before serving.
