Recipe: Make a quick fruit sauce.....

Misc.

Make a quick strawberry or raspberry fruit sauce and put a little over the creme brulee. Leave the brulee in the cups--the sauce of the fruit will cover up the looseness of the creme brulee. And, then put whipped cream on the tops and sprinkle with chocolate shavings--no one will know. (Or, leave out the whipped cream.) Whipped cream always covers a multitute of sins....

Here's a quick and cold fruit sauce--(come and visit me here at TKL, In the Kitchen with Sarah)

Strawberry sauce by Sarah Phillips, THE HEALTHY OVEN BAKING BOOK, Doubleday, 1999:

1 pint freh strawberries, stemmed and sliced or 2 cups unsweetened frozen strawberries, thawed (raspberries or mango would be nice, too)
2 TBSP sugar, plus more if needed
1 TBSP fresh lemon juice

In a food processor fitted with the metal blade or in a blender, puree the strawberries, sugar and lemon juice. Taste, and add more sugar as needed. Transfer to a bowl and refrigerate, if time. Keeps up to 2 days.
