Since this site is for vegetarian recipes, I'm wondering if you have any
restrictions, i.e., strict vegetarian, ovo-lacto- , etc. etc. Since I really
only cook traditional Japanese cuisine, my recipes for dishes would call
for "dashi" stock made from smoked bonito shavings -- the fundamental
ingredient used in traditional Japanese cuisine.

Let me know if you have any restrictions, and I'll try to comply with your
wishes.
