Recipe(tried): Proscuitto-Asparagus Roll-ups

SHIRLEY'S ASPARAGUS ROLLUPS

Fresh Parmesan cheese
fresh or canned asparagus*
sliced Proscutto
Olive oil
Italian breadcrumbs

Put grated Parmesan cheese in a dish.
Add fresh ground black pepper [a little lemon pepper can be added for flavor].
Pour olive oil over and stir.
Let marry for an hour or more.

Take a slice of Proscutto, lay asparagus on top.
Spoon cheese mixture on top; roll up.
Lay on biscuit pan and bake.

Bake in 375 degree oven for 10-12 minutes.

Recipe # 2
This is a recipe I got from my neighbor

Take a slice of Proscutto, lay asparagus on top; roll up.
Dip in egg wash or water; shake off excess.
Just have rolls moist enough for crumbs to stick.
Roll in seasoned Italian breadcrunbs (no salt).
Can be cut into bite sized pieces before baking.
Spray pan and bake in 375 degree oven for 10-12 minutes.

*Fresh asparagus: steam until tender
Canned asparagus: drain well and set in freezer until firm
