Recipe: Boiled and Baked Virginia Ham for Sam

BOILED AND BAKED VIRGINIA HAM
Oven temperature: 190 degrees C (375F)
Preparation time: 15 minutes
Cooking time: 20-25 minutes per pound + 30 minutes

These directions apply to Virginia ham that has been cured for at least 12 months. If the ham has been cured for less than 12 months, follow the instructions on the wrapper or hang the ham and allow it to age.

Ingredients for 10 servings:

5 kg (11 lb.) Virginia Ham
2 tbsp. packed light brown sugar
1 tbsp. breadcrumbs
1 tsp. ground cloves
3 tbsp. dry sherry

Scrub the ham to remove the coating of seasonings and cover with water. Soak for 24 hours, changing the water often.

In a large covered roasting pan, place the ham, skin side down, with enough fresh water to cover. Bring to a boil, reduce the heat, and simmer, covered, for 20-25 minutes per pound.

When cooked, skin the ham and trim off the excess fat.

In a small bowl, combine the brown sugar, bread crumbs and cloves. Press this mixture onto the ham.

Place the ham in a shallow baking dish and bake for 15 minutes, or until the sugar melts.

Remove the ham from the oven and drizzle dry sherry over it.

Return to the oven for 15 minutes.
