PACIFIC LIME SALAD
1 (3 oz.) pkg. lime Jello
1 cup boiling water
1 (8-9 oz.) can crushed pineapple
1 cup (8 oz.) small curd cottage cheese
1 tsp. horseradish (optional)
1/2 cup mayonnaise
1/4 cup chopped nuts
Dissolve Jello in boiling water. Add juice from pineapple. Chill until slightly thickened. Beat until frothy. Fold in remaining ingredients. Chill until set.
PINEAPPLE COTTAGE CHEESE MOLD
(using evaporated milk)
1 (3 oz.) pkg. lime gelatin
1 cup boiling water
1 cup evaporated milk
1 cup small curd cottage cheese
1 (8 oz.) can crushed pineapple
1/2 cup mayonnaise
1/4 cup chopped celery
1/4 cup chopped nuts
Dissolve gelatin in 1 cup hot water; add other ingredients. Pour into mold and chill.
EMERALD ISLE MOLDED SALAD
1 (3 oz.) pkg. lime Jello
1 cup boiling water
1 (8-9 oz.) can crushed pineapple, drained (reserve juice)
1 cup small curd cottage cheese
1/2 cup heavy (whipping) cream, whipped
1/2 cup chopped nuts
Dissolve gelatin in boiling water. Add pineapple juice. Chill until slightly thickened. Beat until frothy. Fold in remaining ingredients. Chill until firm in a 1 quart or 1 1/2 quart Pyrex bowl, mold or rectangular baking dish.
