Recipe: Florida Sunshine Salad (using Jello, grapefruit, and oranges)

FLORIDA SUNSHINE SALAD

1 cup boiling water
1 pkg. (4-serving size) JELL-O Brand Lemon Flavor Sugar Free Low Calorie Gelatin
3/4 cup cold water
1/2 cup fresh grapefruit sections, halved
1/2 cup fresh orange sections, halved

Stir boiling water into gelatin at least 2 minutes until completely dissolved.

Add cold water. Measure 3/4 cup gelatin into small bowl; set aside.

Refrigerate remaining gelatin until slightly thickened.

Remove slightly thickened gelatin from refrigerator and stir in fruit. Pour mixture into serving bowl. Refrigerate until set but not firm.

Place the reserved 3/4 cup gelatin in larger bowl of ice water. Stir until slightly thickened. Beat with electric mixer on high speed until thick and about doubled in volume. Spoon over refrigerated gelatin mixture in bowl. Refrigerate until firm, about 4 hours.

Garnish with additional fruit and mint leaves, if desired.
