Recipe(tried): Growing and Using Horseradish

Barb--just a caution--horseradish spreads like crazy, so never ever rototill through the bed! Everytime that little root splits another plant shoots up! So, it would be wise to devote an enclosed area to your horse-radish. I know that oldtimers kept roots in sand just like carrots, so I suspect it will keep for quite sometime refrigerated. Also, I use my food blender to process the horseradish. I think I just cut it into chunks after cleaning and peeling, add white vinegar to cover, and pulsate until the texture seems right. I would be interested to hear what happened when you tried freezing some like ginger. I bet it works! Good luck--your own horseradish is a wonderful treat!
