ZUCCHINI JELLY
6 cups shredded zucchini
1/2 cup lemon juice
6 oz. strawberry Jello
6 cups sugar
1 cup crushed pineapple
Boil zucchini in small amount of water until clear. Add sugar, juice and pineapple. Stir well. Add Jello and let dissolve.
Pour into hot jelly jars. Cool, then seal. Store in the refrigerator.
Have used apricot and orange jello also.
