Flavor enhancers

Misc.
These may not be secrets to anyone else, but I was surprised to find that

(1) A little vinegar in mashed potatoes enhances the flavor without changing its character.

(2) A little Angostura Bitters added in the final five minutes when making stews and soups seems to intensify the flavors.
