Recipe(tried): Pizzeria Uno's Red Wine Vinaigrette Salad Dressing

This recipe was given to me in the 1980s by a former Pizzeria Uno chef. The restaurant recipe made gallons, so the chef scaled the recipe for me. It keeps well in the refrigerator and improves over time.

PIZZERIA UNO'S RED WINE VINAIGRETTE
(The kind they served and sold in green Grolsch beer bottles)

6 cups red wine vinegar
4 cups vegetable oil
3 cups red wine (Burgundy is recommended)
1 cup sugar
1/3 cup Accent brand flavor enhancer
1/3 cup finely chopped garlic
1 tablespoon dry mustard
1 tablespoon garlic powder
1/2 tablespoon salt
1/2 tablespoon ground black pepper

Combine all ingredients and whisk until combined. Carefully pour into glass containers (wide mouth quart Mason jars are good). Cover and store in refrigerator. Best if made 2-3 weeks in advance. Stir before pouring over salad.
