Recipe: Apricot Filling - 2 recipes (one using dried apricots, one using canned)

APRICOT FILLING

1 (11 oz.) pkg. dried apricots
3/4 cup sugar

Chop apricots into 1/4-inch pieces and place in a saucepan. Add just enough water to cover apricots and cook, uncovered, over low heat (about 225 degrees F) until apricots are soft. Remove from heat and stir in sugar. Makes 2 1/2 cups filling.

APRICOT FILLING

"This is excellent for cookies or rolls and this tastes better than already prepared filling that you purchase in stores."

3 large cans apricots, drained and put through blender
1 cup sugar
3/4 cup cornstarch

Combine sugar and cornstarch, add to blended apricots and cook until thick and clear. Cool.
