Recipe: Pianono for Doris

PIANONO

6 egg whites
6 tbsp sugar
6 egg yolks
6 tbsp sifted flour
jam

Preheat oven to 400 degrees F. Line a jelly roll pan with greased parchment paper.

Beat the egg whites until stiff. Add the sugar by spoonfuls, beating well after each addition. Add egg yolks; blend well. Fold the flour into the mixture. Pour into prepared pan.

Bake for 15 minutes at 400 degrees F.

Turn out on another sheet of paper that has been sprinkled with sugar. Remove paper from bottom of cake. Spread jam over cake and roll up from long side. Dust surface with sugar. Slice crosswise.
