Zucchini aux fines herbes

3 medium zucchini
1 T. chopped mixed herbs:
4 T. butter parsley, chives, basil, thyme
salt and pepper dash lemon pepper seasoning

Wipe zucchini with a damp cloth, trim ends. Cut in slices about 1/2 inch
thick. Melt butter in a large skillet, add zucchini, cover and cook over low
heat, stirring occasionally to prevent sticking. This will take about 15-18
minutes. Halfway through, add the herbs and seasoning, stir. Serve hot.
Serves 3-4.
