Recipe: Souffleed Turkey and Swiss Cheese Sandwiches

Souffleed Turkey and Swiss Cheese Sandwiches
3 Tablespoons mayonnaise
1/4 teaspoon dried dill
1 scallion, sliced thin
2 slices of whole-wheat or multi-grain bread, toasted
2 dill pickles, sliced thin crosswise
1/4 pound sliced cooked turkey breast
1 large egg white at room temperature
1/3 cup finely grated Swiss cheese
1/8 teaspoon paprika
Preheat broiler.
In a small bowl whisk together the mayo, dill, scallion and freshly ground pepper to taste. Spread one side of each slice of toast with the mayo mixture, top the mayo mixture with half the pickles and top the pickles with the turkey. In another small bowl beat the egg white until it holds stiff peaks, fold in the Swiss cheese, paprika and salt and pepper to taste, and divide the cheese mixture between the sandwiches, spreading it evenly on top of the turkey. On a baking sheet broil the sandwiches under the preheated broiler about 4 inches from the heat for 30 seconds to 1 minute, or until the topping is puffed and golden. Transfer the sandwiches to 2 heated plates, and garnish the plates with the remaining pickles. Serves 2.
