Recipe(tried): A simple Pork Chop dinner tonight - Breaded Parmesan Pork Chops, Creamed New Potatoes and Green Beans, Easy Apple Cobbler a la Mode (using biscuit mix)
MenusI found some very nice boneless pork loin chops while shopping and so decided on the following simple menu for our dinner tonight:
Breaded Parmesan Pork Chops
Creamed New Potatoes and Green Beans
Easy Apple Cobbler a la Mode
BREADED PARMESAN PORK CHOPS
4 boneless pork loin chops, fat trimmed off
3 Tbsp. 'real' mayonnaise
1/2 cup seasoned Italian bread crumbs
1/4 cup grated Parmesan cheese
1/4 tsp. salt
1/4 tsp. pepper
Preheat oven to 400 degrees F. Line a jelly roll pan with foil and spray a cooling rack with non-stack spray. Set rack into lined pan, set aside.
Dry pork chops well and thickly coat all over with the mayonnaise.
Combine seasoned bread crumbs, parmesan cheese and salt and pepper. Thickly coat pork chops in breading mixture and place on rack in pan.
Bake in 400 deg oven for about 25 minutes, until chops test done.
CREAMED NEW POTATOES AND GREEN BEANS
I will simply boil enough small new red potatoes for us in salted water until tender and drain.
Meanwhile will steam about 1 cup frozen cut green beans until just crisp-tender, drain and plunge into ice water to stop the cooking, drain and reserve.
While the above are cooking I'll fix a basic cream sauce:
3 Tbsp. butter
3 Tbsp. all-purpose flour
1 (13 oz) can evaporated milk
1/2 tsp. salt
1/8 tsp. ground white pepper
2 Tbsp. chopped fresh chives (optional)
Melt butter in medium saucepan, whisk in flour. Cook, stirring for about 1 minute to cook the raw taste out of the flour. Slowly whisk in the evaporated milk. Cook, stirring, until mixture thickens, stir in salt and pepper (taste and add more salt if needed). Stir in optional chives.
Fold sauce into combined potatoes and green beans in an oven-safe serving dish and keep warm until serving.
EASY APPLE COBBLER (BISQUICK)
Melt 1/4 cup butter in a 7 x11-inch baking pan.
Stir in until smooth:
2/3 cup milk
1 1/2 cups Bisquick baking mix
1 cup sugar
Drop spoonfuls from 1 can pie filling over top of batter in pan*.
Bake at 400 degrees F for 30-35 minutes.
Serve warm with ice cream if desired.
*I'll sprinkle some cinnamon/sugar mixture over before putting this into the oven.
