I was wondering if "ping" was just a family name for the ravioli filling we made. Does not sound very Italian. So I was surprised to find these posts! Our family's ravioli recipe includes Swiss Chard or Spinach, ground beef, spicy pork sausage, eggs, Parmesan, onion, garlic, herbs and bread crumbs, but no cream cheese. My family is from Varazze, Monteggio, Savona in Liguria and Sera Valle in Piemonte. Does the word "ravieu" ring any bells?? That is what my parents/grandparents called ravioli. I believe it the Zenese dialect, but not sure.
