Recipe(tried): Adobo Yucateco!

Recently I found a recipe that I used for many years to season chicken and fish to serve in Mexican Menus. It was given to me by a Mexican friend who still has a restaurant here in San Juan. I want to share it with all of you! Buen Provecho.

ADOBO YUCATECO:

1/2 cup chopped fresh cilantro
1 head of garlic cloves, peeled and sliced
1 tsp ground allspice
1 tsp ground cloves
1 tsp ground cumin
1 tsp ground white pepper
1 tsp ground cinnammon
1 tsp dry oregano leaves
salt to taste
3 tb orange juice
3 tb pinneaple juice
2 tb wine vinegar
1 cup olive oil

Process all ingredients until it has a consistency almost like mayonnaise. Use as a seasoning to chicken, pork, fish or beef. It will keep well refrigerated in a covered glass bottle. It is absolutely delicious. You might add Paprika (2 tb) but then it will not be the genuine thing.
