Salads - Potato, Pasta
Amish Potato Salad
Recipe By: Sarah Miller - Amish neighbor
Servings: 6

6 cups potatoes -- firm-cooked
6 hard-boiled eggs
1/2 cup onions -- chopped fine
1 cup celery -- chopped fine

Dressing:
1/2 cup salad dressing
1 cup sugar
3 tablespoons prepared mustard
2 tablespoons vinegar
1 tablespoon salt
1/4 cup milk

Chop firm-cooked potatoes, hard-boiled eggs, onion and celery finely; place in a bowl and combine dressing ingredients. Mix well and pour over potato mixture, mixing again to blend well. Chill until ready to serve.

NOTES : This is so good! My husband and I went to an Amish auction and this was served in plastic cups. We like it so well, I asked my friend Sarah Miller if she could tell me how they make their potato salad and this is it! Don't be put off by the amount of sugar or salt called for in the dressing...they (Amish) like more sweet in theirs.
