Italian Roast Potatoes

2 pounds baking potatoes
3 large onions -- coarsely chopped
1/2 cup olive oil
1 teaspoon salt
1/8 teaspoon pepper
Peel potatoes and cut in 1/2-inch cubes. Place potatoes and onions in a rimmed 10x15-inch baking dish and mix evenly with the oil, salt and pepper. Bake uncovered in a 325 F. oven for 2 to 2-1/2 hours or until they are a light golden color and potatoes cooked, stir occasionally.
