For many years I have been trying to copy the famous Alberto's Carne Asada Burrito (Calif)...... I have finally come across a recipe that comes VERY close. Enjoy!!
FOR THE MARINADE:
1 (12 oz) bottle beer
1/2 cup olive oil
1/2 cup soy sauce
2 tbsp Worcestershire sauce
1 tbsp minced garlic
1 tbsp ground cumin
salt & pepper to taste
1 to 2 lb. beef skirt steak or any tender cut of choice, thin sliced for grilling
FOR THE PICO DE GALLO:
2 to 4 avocados, small diced
1 to 2 small to medium tomatoes, chopped
1/2 onion, chopped
1 bunch cilantro, chopped
2 to 3 jalapeno peppers, seeded and minced
1 lime, juice of
salt & pepper to taste
TO SERVE:
flour tortillas
TO PREPARE THE MARINADE:
Mix all of the marinade ingredients in a bowl (except beef). Put the marinade and beef slices into a zip-lock bag and let marinate for at least 2 hours.
Grill the meat on high heat making sure that it is NOT over cooked (moist & juicy).
TO PREPARE THE PICO DE GALLO:
Add all Pico De Gallo ingredients into a bowl and combine, amounts varying to your liking.
TO SERVE:
Heat each flour tortilla until soft and puffy. Add chopped beef and Pico De Gallo to a heated tortilla and wrap. Enjoy !!!
