Recipe: Apple Crisp Muffins (apple muffins with oatmeal crisp topping)

APPLE CRISP MUFFINS

FOR THE MUFFIN BATTER:
3/4 cup milk
1/2 cup vegetable oil
1 egg
2 cups flour
1/3 cup white granulated sugar
3 tsp salt
1 medium apple, pared and copped
1/2 tsp ground cinnamon

FOR THE CRISP TOPPING:
2/3 cup brown sugar
1/2 cup flour
1/2 cup oats, uncooked
1/3 cup butter or margarine
3/4 tsp ground cinnamon

Heat oven to 400 degrees . Grease 12 muffin pan cups.

Beat milk, oil and egg together; add apples.

Stir in the remaining ingredients for the muffin batter, all at once, just until flour is moistened. Divide into prepared muffin cups.

Mix the crisp ingredients together. Generously top each muffin with the crisp mixture.

Bake about 18-20 minutes.

Makes 1 dozen muffins
