Recipe(tried): Apple Griddle Cakes

Apple Griddle Cakes

2 cups flour (I use half white flour with half whole wheat flour plus a little wheat germ)
2 TBSP. sugar
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon or apple pie spice
2 eggs
1 cup milk
1 cup sour cream or plain yogurt
2 TBSP. oil
1 or 2 apples (depending on your tastes) peeled and shredded

Mix dry ingredients; set aside.

Beat eggs then stir in milk, sour cream, and oil. Add milk mixture all at once to dry mixture, stirring just until smooth. Fold in apples.

Spoon batter onto hot, lightly greased griddle to form 5-inch circles. Brown on both sides and serve hot.
