Recipe: Carrot Cake Waffles

Breakfast and Brunch
CARROT CAKE WAFFLES

1/2 cup grated carrot
1/4 cup vegetable oil
1 egg, beaten
1/2 cup sugar
1/2 cup self-rising flour
1/4 cup oats regular or quick
1/2 tsp cinnamon
1/3 tsp baking soda
2 tbsp chopped walnuts (optional)

Beat together carrot, oil, and egg.

Add sugar, flour, oats, cinnamon, and baking soda; mix well.

Stir in walnuts. Spoon batter onto grids until full but not overflowing.

Bake for approximately 5-7 minutes, checking often for doneness.
