Recipe(tried): Artichoke Quiche

Artichoke Quiche
This is a luncheon favorite

One 9-inch pie shell
2 (6 oz) jars marinated artichoke hearts
1 small onion, finely chopped
1 clove minced garlic
4 eggs
1/4 cup dry bread crumbs
1/4 tsp salt
1/2 lb sharp cheddar cheese, shredded
2 tbsp minced parsley
1/8 tsp each of oregano, Tabasco and pepper

Drain artichokes, and saute the onions and garlic in the marinade for 5 min.

In a large bowl, beat eggs. Add crumbs, salt, oregano, pepper, and Tabasco.

Stir in cheese, parsley, artichokes, and onion mixture. Turn into pie shell and bake at 325 degrees for 45 minutes.
