RED VELVET CAKE
2 1/2 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
1 3/4 cups vegetable oil
1 1/2 cups sugar
1 cup buttermilk
2 eggs
2 oz. red food coloring
1 tsp. cider vinegar
1 tsp. vanilla
Cream Cheese Frosting (recipe follows)
Preheat oven to 350 degrees F. Grease and flour 3 (8-inch) layer cake pans.
Sift flour, baking soda, and salt together; set aside.
Cream oil, sugar, buttermilk, and eggs. Blend dry ingredients into creamed mixture. Add food coloring, vinegar, and vanilla. Turn into prepared pans.
Bake for 30 to 35 minutes. Cool, assemble, frost.
CREAM CHEESE FROSTING
1 (8 oz.) pkg. cream cheese, softened
1/2 cup butter, softened
1 (1 lb.) box confectioner's sugar, minus 1/2 cup
1 tsp. vanilla
Mix cream cheese, butter and sugar until smooth. Add vanilla. Mix well. Spread between layers, on sides and top of cooled cake.

I haven't tried this recipe and it wasn't sourced but I think it's an old Wesson oil recipe.
