Recipe(tried): Aunt Pat's Escalloped Corn Casserole and Quick Fix Appetizer

Side Dishes - Assorted
I make this Corn Casserole all the time, it is very simple, can be doubled easily and is easy to clean up. Also, I included a really quick appetizer.

Aunt Pat's Escalloped Corn Casserole

1 egg
1/2 cup melted butter (1 stick)
1 can whole kernal corn - undrained
1 can creamed style corn
1 cup sour cream (8 oz. container)
1/2 tsp. onion flakes (or minced onions)
1 box Jiffy corm meal muffin mix (reg. box)
salt and pepper to taste

Mix all ingredients together
Pour into a 9 x 9 baking dish
Bake at 350 for 45 - 60 minutes

If double, use 13 x 9 x 2 baking dish, cook at 60 minutes.

Quick Fix Appetizer

1 8oz pkg Cream Cheese
1 jar Pick-A-Peppa (pepper?) sauce

place cream cheese block on plate
pour some of the Pick-a-Peppa sauce over top of
cheese

serve with crackers
