Recipe(tried): Avocado Sauce (4)

I love Avocados and collect recipes for them.
Here are a few sauces I have....maybe one will seem close to what you are looking for. I hope so.

AVOCADO SAUCE (using sour cream)

1/4 avocado, peeled and mashed
1/4 cup sour cream
1 pinch chili powder
1 teaspoon lemon juice

Place avocado, sour cream, chilli powder and lemon juice in saucepan and heat until just warm.


AVOCADO SAUCE
This one is served cold.....

1 ripe medium California avocado, pitted and peeled
2 tablespoon mayonnaise
2 tablespoon fresh lime juice
1/2 teaspoon Sea salt
1/2 teaspoon sugar
1/2 cup milk
fresh jalapeno or Serrano chile (including seeds), stemmed and quartered lengthwise

Pulse avocado with mayonnaise, lime juice, salt, sugar, and one fourth of chile in a food processor until chile is finely chopped. Add milk and pur e until smooth. Add more chile if desired, processing until smooth. Transfer sauce to a bowl and chill, covered.


AVOCADO SAUCE (using lemon and olive oil)

1/2 onion
the juice of one lemon
1 to 2 cloves of garlic, minced
1/2 tomato, diced
extra-virgin olive oil
1 ripe avocado, peeled and diced
salt and pepper to taste (I use sea salt and freshly ground pepper)
fresh coriander, chopped

Mix onion, garlic, tomato, avocado, and coriander, being careful not to mash the avocado. Add the extra-virgin olive oil, lemon, and salt and pepper to taste.


AVOCADO SAUCE (using tomatillos)

1 1/2 cups green tomatillos freshly cooked in water or canned, drained
3 fresh coriander springs, leaves only
2 garlic cloves, peeled
2 avocados, peeled and pitted at the last moment

In a blender jar, blend the tomatillos with the coriander, garlic, 1 teaspoon salt, avocados and 1 1/4 cups liquid in which the tomatillos were cooked (or water, if canned are used) until completely smooth.
