BEAN COOKERY BASICS
One pound of dried beans equals 2 1/2 cups.
One pound of dried beans will yield 5 1/2 to 6 1/2 cups of cooked beans, depending on size.
Spread the beans out on a towel, sort out and discard any debris or shriveled beans.
Salting the beans during cooking makes them tough.
To check the beans for doneness, place a few beans in a spoon, blow on them and if the skins burst and split they are done.
Don't just let the pot just set in the oven, you've got to add water as necessary to keep the beans moist, but don't get impatient and add to much water, and drown the beans.

OLD FASHIONED BAKED BEANS
INGREDIENTS:
1 Lb Dry Navy Beans.
1 1/2 Tsp Salt.
4 Qts Water (divided use)
1 Cup Red Onion, chopped.
1/2 Cup Molasses
6 Strips Bacon, cooked and crumbled.
1/4 Cup Packed Brown Sugar.
1 Tsp Ground Dry Mustard.
1/4 Tsp Pepper.
INSTRUCTIONS:
In a large sauce pan, bring the beans, salt and 2 quarts water to a boil.
Let boil for 2 minutes.
Drain the beans, discarding the liquid.
Return the beans to the pan and cover with remaining water, bring to a boil.
Reduce heat, cover and simmer for 1 1/2 - 2 hours or until the beans are tender.
Drain, reserving the liquid.
In a greased 2 1/2 quart baking dish, combine all ingredients except the reserved bean liquid.
Add 1 cup of the bean liquid to the beans.
Cover and bake at 325 for 3 to 3 1/2 hours or until the beans are desired thickness.
More water may be added if beans are to dry during cooking - if added, stir in well.

EASY BEAN BAKE
INGREDIENTS:
1 Lb Great Northern Beans (or navy beans will work)
1 Tsp Salt.
1 Lb Sliced Bacon, cooked, drained and crumbled.
1 Cup Packed Brown Sugar.
3 Tbs Molasses.
1 Lg Onion, chopped
INSTRUCTIONS;
Pre-heat Oven to 350
In a large sauce pan cover the beans with water, add salt and bring to a boil.
Boil for 2 minutes, remove from heat.
Cover and let stand for 1 hour.
Drain reserving the liquid.
In a greased 3 Quart Baking dish or bean pot, combine beans with 1 cup of bean liquid.
Stir in all remaining ingredients.
Cover and bake at 350 for 1 1/4 hours or until beans are tender, stirring occasionally.

**LOVE'S BAKED BEANS
(for a crowd)
INGREDIENTS:
5 Lbs Canned Pork and Beans
2 Med Bell Peppers (chopped)
1 Lb Brown Sugar
14oz Bottle Catsup
8 Slices Bacon (uncooked)
Liquid Smoke to taste.
INSTRUCTIONS:
Pre-Heat Oven to 325
Combine: All of the ingredients in a large baking pan.
(an aluminum throw-away is ideal for this recipe)
Top with bacon.
BAKE: at 325 for 2 hours, 15 minutes.
Will serve up to 20 people.
**NOTE: This is reputed to be the recipe used by the LOVE'S RESTAURANTS of So. Calif.

BOSTON STYLE BEANS
INGREDIENTS:
1 Lb Dry White Beans (2 1/2 cups).
8 Cups Cold Water.
8oz Salt Pork (cut into 1/2 inch cubes).
1 Cup Onion (chopped).
1/4 Cup Brown Sugar (packed).
1/4 Cup Maple (or Maple Flavored) Syrup.
2 Tbs Worchestershire Sauce.
1 Tsp Dry Mustard.
1/2 Tsp Salt.
1/4 Tsp Pepper.
INSTRUCTIONS:
Rinse and sort beans discarding stones, and undesirable beans.
In a Dutch oven or bean pot, combine beans and cold water, bring to a boil, reduce heat and simmer uncovered for 2 minutes.
Remove from heat and let stand for 1 hour.
(Option: to skip boiling the beans, soak them covered with water overnite in a covered pan).
When beans are ready by either method -- drain and rinse.
In the same pan combine beans with 8 cups fresh water.
Bring to a boil, reduce heat and simmer for about 1 1/4 hours or until tender, stirring occasionally.
Drain beans and set aside - reserving their liquid.
In the same pan cook salt pork cubes over medium heat until slightly crisp.
Add onion cook until tender and transparent.
Blend in the brown sugar and cook until dissolved .
Stir in the molasses, maple syrup, Worchestershire sauce, dry mustard, salt and pepper.
Let simmer for 10 minutes to blend.
Add the drained beans along with 1 cup of their liquid.
Stir and cover or transfer to a large deep covered casserole.
Bake covered at 300 for 2 1/4 - 2 1/2 hours or to desired consistency, stirring occasionally.
Add reserved bean liquid only as and if needed if beans become to dry.

BOSTON BAKED BEANS
INGREDIENTS:
1 Lb Dried Navy Beans.
Water as needed.
1/2 Cup Maple Syrup (or maple flavored syrup)
2 Tbs Worchestershire Sauce.
1 Tsp Dry Mustard.
1/4 Cup Catsup.
1 Med Onion (peeled - left whole)
1/2 Lb Chunk Salt Pork (cut into 2 pieces)
INSTRUCTIONS:
Pick over and the rinse beans, discard bad beans and stones.
In a bean pot, cover the beans with 3 inches of water.
Bring the pot to a rolling boil for 2 minutes.
Remove from heat, cover and let stand for 1 hour.
Return the beans to a boil.
Reduce heat, simmer uncovered 1-1 hours until beans are tender.
Add water as needed to keep the beans covered with moisture.
Remove from heat and drain, reserving the liquid.
Pre-Heat Oven to 350
Stir the maple syrup, Worchestershire sauce, mustard, and catsup into the beans, adding enough bean liquid to cover.
Push the whole onion and salt pork pieces under the beans.
Cover and bake at 350 for 1 hour or until bubbly.
Reduce heat to 250 - bake for 6 - 8 hours, stir occasionally.
As the beans cook they will absorb the liquid, add the reserved bean liquid, just a little at a time as needed for moisture.
When the beans are done, remove and discard the onion.
Slice and add the salt pork to the beans or serve on the side.
