Baked Lemon Chicken with Mushroom Sauce posed by Jean/FL on Monday Feb 10th 2003

Hot Cooked Noodles

CHEESY ASPARAGUS
1 bunch fresh asparagus
1/4 cup chopped red bell pepper
1/3 cup mayonaise
1/3 cup shredded sharp cheddar cheese
1/4 cup sliced green onions
1 egg white, beaten until stiff peaks form
Steam asparagus until tender.Preheat oven to 350. Place steamed asparagus in a shallow baking dish that has been sprayed with non-stick cooking spray. Sprinkle with chopped red bell pepper. Combine mayonaise, cheese and green onion in a small bowl. Fold in egg white. Spread mayonaise mixture over asparagus and red pepper. Bake at 350 for 20 minutes. Makes 4 servings.
