Menus This morning a friend picked my dog and I up and we traveled the 50 miles to another friend's home for the day. I returned home minutes before my husband and we opted for a pantry-dinner. He was thrilled, as it brings back memories of childhood for him (except for the "lite" parts. You asked....here it is:!
Pan-Fried Spam Lite with Brown Sugar Glaze
Cast-Iron Skilleted Taters from the oven
Creamed Corn
Lite Vanilla Ice Cream with Ovaltine topping
Preheat oven to 425.Peel 3 medium potatoes and slice thinly. Thinly slice 1/2 an onion. Heat a cast iron skillet over med/high heat, drizzle skillet with olive oil and lay potato slices in slightly overlapping cirlces until bottom of skillet is covered. Put 1/2 the onion slices over tater layer, sprinkle with salt and pepper. Place remaining tater slices over onions. Top with remaining onion slices and sprinkle with salt and pepper. Spray with olive oil (I have one of those pump-up containers).(Or drizzle with a bit of olive oil) Place skillet in preheated oven and bake at 425 for 15-20 minutes until tender and browned on top. While taters are baking, prepare Spam Lite!
I haven't made this particular entree in quite some time and was glad to see there were instructions on how to get the Spam Lite out of the can! It has a pop top now, as opposed to the peel-off strip of razor sharp metal it used to sport. Slice the spam into a non-stick fry pan, let it brown a bit, turned the pieces over and sprinkled each with a bit of brown sugar. Let brown a bit on second side, until warmed through.
While Spam is cooking, open a can of creamed corn, dump in a microwave safe bowl and heat in microwave on high until hot.
Serve meal to very happy husband!
Later...Scoop ice cream into bowls and top with powdered Ovaltine. Serve to happy husband who can't have caffine.
Tomorrow I have to travel to the city for the day so I have arranged to bring home take-out ribs, corn on the cob, jalapeno cornbread and coleslaw home from The Arizona Rib Company for our Valentine's Dinner.
Next week I plan to be preparing and posting some truly "lite" meals. Happy Valentine's Day to All!
